Yes I recently had hirame no engawa from local sushi restaurant (chef told me it was sourced to Korea), and was surprised at how decent it was. The interesting thing is that even that piece of engawa looked strangely similar to the version served by the great Ino Sushi in San Francisco, so I am not surprised at that being a viable alternative to what was used in the past. Seems like there are hirame farms around Jeju island off the coast of Korea.

確かに魚って〆たてはコリコリしすぎですよね。
でも、朝取れたっていう鰯が焼いて朝飯に出てきたときは幸せでしたけど。 あれは相模湾のどっかでした。
