Konbu is sold at most of Japanese market so you can make this at your home
Hotate sounds very nice I will try it next time

I LOVE hirame no konbu jime! Sadly so few places in SF Bay Area even do this anymore. I had it prepped using medai once (Burlingame), and hotate (Seattle). I hope I get to taste it with kinmedai someday.
