けっこう前からこの路地で商売してたけど、なかなか食べる機会がなかったというのは、この路地にくるのはコーヒーを買いにくるからで、コーヒーが飲みたいときにホットドッグも食べたいって衝動はあまりない、

最近ではもう珍しくなくなった牧草で育てた牛を使ったとか、例のパン屋のバンを使うとかそんな感じのやつでした

作ってくれた人が昼間からなぜかヘロヘロっぽく、

まだ熱くなってないソーセージを挟まれた

anchovy syrup

いつもナンプラーとかニョクマムの安さにはビックリする大体７００ｍｌ位で　１－２ドル程度、輸送費だけでもそれ以上かかりそうだけど、どんな利益構造になっているのか　５ドルとか１０ドルするような高級品があるのかと探してみるけど、チャイナタウンでは見当たらない、

先日、ニョクマムの南イタリアバージョーンを見つけた、イワシを詰めこんだ樽から染み出してくる汁を集めたものらしい、ラー油程度のサイズだけど、東南アジアのニョクマムからすると、かなり高級、

オリーブオイルや塩のかわりにトマトに使うとか、この anchovy syrup パスタのレシピなんかもある
 

今日は材料ないので、ありあわせ peperoncino
 
あまり熱を与えるのもどーかと、フィニッシュに上から、それにしてもシロップって呼び方がどーもしっくりこない、

おにぎりがライスボールと呼ばれるみたいな、イタリア語では colatura dialici というらしい、ちょっとは臭そうかな、
